White Chocolate Macadamia Nut Cookies

Makes 10 cookies

½ cup plus 2 tablespoons
Wheat-Free Market All-Purpose Baking Mix
2 tablespoons unsalted butter, softened
1 large egg
1-1/2 tablespoon
Virtue Sweetener
¼ teaspoon vanilla extract
Pinch of sea salt
¼ cup mini white chocolate chips
¼ cup chopped macadamia nuts

Preheat oven to 350 degrees F. In a medium bowl add baking mix, butter, egg, sweetener, vanilla, salt, white chocolate chips and nuts. Blend well.

Using a 1-1/2 tablespoon scoop, scoop the dough onto an ungreased cookie sheet. Flatten cookies out to desired shape, approximately a 3 inch circle. Optional - "garnish" the cookies on top with some of the chopped nuts.

Bake for 12 minutes or until the edges begin to brown. Allow cookies to cool for 1 minute before carefully transferring them to a wire rack to cool.


note:  It is more difficult to find Wheat Belly friendly white chocolate than it is dark chocolate.  So be mindful of the carbs from the white chocolate you choose relative to the number of cookies made.
