Wedding Cookies

Makes 6 Cookies

There are many versions of "Wedding" cookies and this recipe is easily adaptable to your own preferences.  For instance, you could omit the chocolate chips and add some chopped pecans and 1/8th teaspoon of vanilla to make pecan sandies.  You could also substitute dried berries for the chocolate for a different flavor profile.  So have some fun making your own!

½ cup
Wheat-Free Market All-Purpose Baking Mix
½ tablespoon
Wheat-Free Market Sweetener
2 tablespoons salted butter, room temperature
2 tablespoons mini chocolate chips
Powdered Wheat-Free Market Sweetener*

Preheat oven to 350 degrees F. In a medium bowl blend baking mix, sweetener, butter and chocolate chips.

To shape cookies, pack a tablespoon measuring spoon with dough mixture and then carefully remove by “knocking” it out into hand. Place cookies on ungreased cookie sheet and bake 10-12 minutes or until cookies just begin to brown. Do not over bake.

Carefully remove and cool on wire rack for 5 minutes before rolling slightly warm cookies in powdered sweetener.

*To make Powdered Wheat-Free Market Sweetener, place 2-3 tablespoons of sweetener in food processor or Magic Bullet type of device and pulse until a fine powder forms.
