Walnut Chia Berry Muffins

Preheat oven to 350 degrees.

In a bowl whisk one egg with 1/4 cup of heavy cream or milk, add 1 tablespoon of coconut oil, and then stir in 2 tablespoons of chia seeds. Let this mixture sit for just a minute or two.

Then blend in two packets of our
Wheat-Free Market Mixed Berry Muffin Makers, adding water as necessary to have a somewhat firm batter (but not a dough.)

Spoon evenly into 4 wells in a muffin pan greased with coconut oil.

Top with a few walnut pieces.

Bake for approximately 25 minutes or until firm yet with a little bounce to the touch.
