Makes 3 waffles
¼ cup Wheat-Free Market Pancake Mix
1 large egg
¼ teaspoon vanilla
¼ cup milk
¼ cup sour cream (or more milk)
2 tablespoons salted butter
2 teaspoons Wheat-Free Market’s Sweetener, Virtue
Preheat waffle iron.
In a medium bowl, add pancake mix, egg, vanilla, milk and sour cream. Blend well. In a small bowl, add butter and sweetener and microwave for 30-45 seconds or melt on the stove. Add butter mixture to waffle batter, making sure you get all the sweeter out of the bowl. Stir and taste for sweetness and adjust if needed.
Butter the bottom of the waffle maker. Using ¼ cup measurement, scoop batter out on to the waffle iron. Cook according to manufactures instructions and until golden brown. Using a fork, carefully remove waffle from waffle iron.
Whipped Chocolate Cream
1 oz. dark chocolate chips or chopped chocolate (about 8 small squares or 2 tablespoons)
½ teaspoon Wheat-Free Market Sweetener, Virtue (optional)
½ cup heavy whipping cream
Microwave chocolate in a small bowl until melted or carefully melt in a saucepan, stirring every 30 seconds.
Once chocolate is melted, remove from heat and stir in sweetener and then stir in cream by adding it 2 tablespoons at a time into the melted chocolate and stir until blended. After adding the last 2 tablespoons of cream, continue to stir until the cream thickens. Taste for sweetness and adjust if necessary and refrigerate for at least 30 minutes to firm up.
Top warm (or cold) waffles with chocolate whipped cream and enjoy.
