Servings: About 12 pieces


These confections are a delight and full of taste and texture.  No need to tell friends and family members that these are actually grain-free and low in sugar!


Ingredients:
Base:
12 shelled walnut or pecan halves

Caramel Topping:
1-1/2 tablespoons butter
2 tablespoons Virtue Sweetener
1-1/2 tablespoons heavy cream
¼ teaspoon vanilla extract

Toasted Coconut:
1-1/2 tablespoons coconut flakes or shavings, unsweetened

Chocolate Topping:
¼ cup dark chocolate chips
½ teaspoon coconut oil
½ teaspoon butter


Directions:
Place nuts on a parchment or wax paper lined cookie sheet and set aside.

In a small saucepan over medium-high heat, combined butter and Virtue Sweetener. Continually stir for approximately 5 minutes while the butter browns and bubbles, being careful not to burn. Add cream and continue to stir the boiling mixture for another 2-3 minutes. 

Remove from heat and stir in vanilla. Let cool, but stir occasionally so that consistency is smooth. When it starts to thicken (5-10min), spoon a dollop individually over each nut. Chill in refrigerator for 30min. 

While caramel covered nuts are chilling, spread coconut flakes into a small baking dish and toast in a toaster oven or traditional oven until golden brown (2-4min). Remove from oven and set aside. 

In a microwave safe bowl, combine chocolate chips, coconut oil and butter. Microwave for approximately 30 seconds on high. Stir until consistency is melted and smooth. Let cool, but occasionally stir so that consistency is smooth. When it starts to thicken (3-5min), spoon a dollop individually over each chilled, caramel-topped nut. Sprinkle toasted coconut flakes over the warm chocolate covered nuts. Chill for 1hr before serving.
