1 cup Wheat-Free Market Pizza Crust Mix
½ teaspoon salt
1 large egg
1 tablespoon extra-virgin olive oil
1 tablespoon water
20 pepperoni slices
3 cheese sticks, cut in quarters*
Extra shredded mozzarella cheese
Red pepper flakes and basil to garnish
Pizza or marinara sauce for serving

Preheat oven to 425 degrees F.

In a medium bowl combine pizza mix and salt. Then add egg, olive oil and water. Blend well. 

Using a nonstick mini cupcake pan, place 10 pepperoni slices in the bottoms of the wells. Top with a piece of cheese, followed by a tablespoon scoop of dough. Using a damp hand, flatten the dough out. Then top with final slice of pepperoni, shredded cheese, red pepper flakes and basil.

Bake for 8-10 minutes or until cheese has browned.

Allow to cool for 1 minute before removing from pan and serve with pizza sauce or marinara. If making in advance, pop in the microwave just before serving to re-melt cheese.

* Or use 1-inch cubes of mozzarella or favorite cheese.
