Spinach - Artichoke Hot Dip

Serves 12

This hot dip is sure to be a party pleaser.  Serve it with our grain-free crunchy pita chips for a delicious grain-free and sugar-free appetizer.

2 tablespoons butter
1 small onion, finely chopped
1 tablespoon minced garlic
Heaping ¼ teaspoon salt
Heaping ¼ teaspoon pepper
8 ounces cream cheese
10 ounces chopped spinach, thawed and drained
14 ounce can artichoke hearts, drained and chopped
½ cup sour cream
¼ cup mayonnaise
¼ cup grated parmesan cheese
2 teaspoons-1 tablespoon Wheat-Free Market Garlic Serrano Hot Sauce
1 cup shredded mozzarella cheese

Melt butter in medium sauce pan over medium heat. Add onions, garlic, salt and pepper. Cook for 6-8 minutes or until onions are tender, stirring occasionally. Next, add cream cheese and stir until melted. Stir in spinach, artichokes, sour cream, mayonnaise, parmesan cheese and hot sauce. Taste and adjust salt or spice if desired.

Pour into serving dish and top with shredded cheese.  Place under broiler for 5 minutes or until cheese melts or bake at 350 degrees for 20-25 until cheese melts.

Serve with Wheat-Free Market’s Crunchy Cheddar Pita Chips (make 2 batches) or serve with carrot sticks or bell pepper strips.
