Sloppy Joe Pie with "Biscuit" Topping
Sometimes a "one dish" meal is the perfect solution for a quick and easy dinner. And now you can enjoy the warm goodness and sweet and tangy flavor of a sloppy joe without the grains and without the guilt!
1 lb. ground meat (beef, lamb or turkey)
1 medium onion, chopped
1 bell pepper, chopped
1 cup crushed tomatoes (canned)
2 tablespoons tomato paste
½ tablespoon Wheat-Free Market Sweetener
½ teaspoon garlic powder
3 tablespoons vinegar
½ teaspoon salt
½ teaspoon pepper
½ - 1 teaspoon Wheat-Free Market Garlic Serrano or Chipotle Hot Sauce (optional)
1 cup Wheat-Free Market All-Purpose Baking Mix
2 large eggs
3 tablespoons butter, melted
3 tablespoons whipping cream
Scant 1/8 teaspoon salt
Preheat oven to 350 degrees F. In a large frying pan, sauté ground meat, onions and bell pepper. Cook over medium heat for 10-12 minutes or until meat is done and veggies are soft. **
** (If using a high fat meat, brown meat first then drain and set aside. Then, sauté the veggies in 1 tablespoon of oil before combining.)
Next, add crushed tomatoes, tomato paste, sweetener, garlic, vinegar, salt, pepper and hot sauce (optional). Continue to stir and taste for sweetness and salt and adjust if needed. Pour meat mixture into the bottom of a 9 inch pie plate or casserole dish.
Prepare biscuit topping by adding baking mix, eggs, butter, cream and salt to a medium bowl and mix well. Using a 1-1/2 tablespoon scoop (or heaping tablespoon measurement), scoop biscuit mixture on top of the meat mixture to form little biscuits. Bake for 22-25 minutes or until biscuits are done.
