Salmon Patties w/ Spicy Dill Sauce
Makes 10 Patties
½ cup Wheat-Free Market Foods All-Purpose Baking Mix
½ teaspoon sea salt
½ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dried dill
1/8 teaspoon cayenne pepper
14 oz. can of wild salmon, well drained and deboned
1 large egg
2 tablespoons lemon juice
2 tablespoons mayonnaise
3-4 tablespoons of bacon grease or salted butter for frying pan
In a medium bowl blend baking mix with salt, pepper, onion powder, garlic powder, dill and cayenne. Add salmon, egg, lemon juice and mayonnaise to dry mixture. Mix until ingredients are well blended. Using a 3 tbsp. scoop, form mixture into patties. Should make around 10.
Heat 12-inch skillet over medium heat. Add bacon grease to pan. Place patties in hot pan and cook for 4-5 minutes or until golden brown and then flip and cook for another 3-4 minutes or until done.
Spicy Dill Sauce
Makes ½ cup
2 tablespoons Wheat-Free Market Buffalo Wing Sauce
¼ cup mayonnaise
2 tablespoons lemon juice
1 teaspoon dried dill
Blend wing sauce, mayonnaise, lemon juice and dill in a small bowl. Serve with Salmon Patties.
