Makes 2 waffles
1/3 cup Wheat-Free Market All-Purpose Baking Mix
1 large egg
1 tablespoon cooked pumpkin puree
2 tablespoons milk or dairy substitute
¼ teaspoon pumpkin pie spice
¼ teaspoon cinnamon
1 tablespoon unsalted butter, melted
1 teaspoon Virtue Sweetener
2 tablespoons chopped pecans (optional)
Butter for waffle iron
Preheat waffle iron. In a small bowl, add baking mix, egg, pumpkin, pumpkin pie spice, cinnamon, butter and sweetener. Stir well.
Grease the bottom of the waffle iron with butter or cooking spray. Using a ¼ cup measurement, divide the batter between 2 waffle wells. Allow waffles to cook until golden brown.
