2 tablespoons Virtue Sweetener
¼ teaspoon vanilla extract
1 tablespoon butter or coconut oil (melted)
½ cup pumpkin puree, unsweetened
½ cup Wheat-Free Market All-Purpose Baking Mix
¾ teaspoon Pumpkin Pie spice
1 tablespoon water
Preheat oven to 350 degrees.
In a mixing bowl, beat together the egg, Virtue Sweetener, vanilla extract, and butter until thoroughly combined. Add pumpkin puree and mix to a smooth consistency. Add the baking mix and spice and mix well, adding up to a tablespoon of water if necessary if you feel the batter is too stiff.
Spoon the batter into a silicone lined or greased muffin tin. Fill to the top. Bake for approximately 30 min, or until a toothpick comes out clean. Remove from oven and let cool. Great with butter!
