Pecan Balls

Makes: 8

½ cup Wheat-Free Market All-Purpose Baking Mix
1 tablespoon Virtue Sweetener
¼ teaspoon vanilla extract
2 tablespoons salted butter, very soft
3 tablespoons finely chopped pecans

Preheat oven to 325 degrees F. In a small bowl combine baking mix, sweetener, vanilla, butter and pecans. Dough will be very dry. Using a tablespoon measurement, scoop dough into hands and press into a ball (dough will be dry).  Place balls on cookie sheet and bake for 15 minutes or until they begin to brown.

Once cooled, drizzle with melted dark chocolate. Store in refrigerator until ready to serve.
