Makes about 21
¼ cup butter
1 tablespoon Virtue Sweetener
1 cup natural peanut butter
¾ cup Wheat-Free Market All-Purpose Baking Mix
¼ cup dark chocolate chips
¼ cup heavy whipping cream
Line a 9X5 inch loaf pan with plastic wrap and set aside.
In a medium bowl, microwave butter and sweetener until butter is melted. Stir in peanut butter and baking mix. Taste for sweetness and adjust if needed.
Pour in prepared loaf pan and refrigerate or freeze until mixture sets, about 15-30 minutes.
In a medium bowl, melt chocolate chips (either microwave or double broiler). Whisk in heavy whipping cream until smooth. Spread chocolate mixture over hardened peanut butter mixture and freeze for 1 hour or refrigerate or 2 hours, or until firm enough to cut.
Cut into small squares. Store in freezer or fridge until ready to eat.
