Makes: 45 pieces

1/2 cup salted butter*
1/4 cup Virtue Sweetener
1/2 cup heavy whipping cream
1/2 cup natural creamy peanut butter

In a medium sauce pan over medium heat, add butter in small pieces. Let butter melt and then begin to bubble before adding sweetener. Bring mixture back to a simmer and add heavy whipping cream. Stir and cook for 3-4 minutes, being sure not to burn. Mixture will be thick and creamy.

Remove pan from heat and whisk in peanut butter until there are no lumps.

Pour mixture into a foil lined loaf pan and refrigerate for 1-2 hours. Cut into 1 inch squares. Keep refrigerated until ready to serve.

*Salted or unsalted butter can be used. Salted butter gives more of a “peanut butter cup” taste but unsalted works well too.
