With just four ingredients and a short baking time, these cookies make a quick and easy snack if the mood hits you!
½ cup natural peanut butter
1 large egg
1 tablespoon Wheat-Free Market All-Purpose Baking Mix
1½ tablespoons Virtue Sweetener
Preheat oven to 350 degrees F. In a small bowl blend peanut butter, egg, baking mix and sweetener. Using a 1-1/2 tablespoon scoop, form dough into balls and then flatten them into a 3 inch diameter cookie. Use fork to make indentations on the top of the cookie.
Bake for 6-8 minutes or until the edges just start to brown. Be careful not to overbake. Carefully remove cookies with spatula and allow them to completely cool and become firm on a wire rack before handling.
