Peanut Butter Bites

Makes 9

2 tablespoons butter
1 tablespoon Wheat-Free Market Sweetener
¼ cup plus 2 tablespoons natural peanut butter
¼ cup Wheat-Free Market All-Purpose Baking Mix
1.5 oz. bittersweet or dark chocolate

To  a small pot add butter and sweetener. Cook until sweetener has dissolved. Turn off heat and stir in peanut butter and baking mix. Transfer to small bowl and refrigerate for at least 30 minutes or until mixture is firm enough to scoop. Once mixture is firm, use 1 tablespoon size scoop and scoop mixture onto small plate. Freeze for at least 1 hour (or overnight) until hard.

Melt chocolate (either in double boiler or in microwave) and transfer to small bowl or ramekin. Place frozen peanut butter bites in chocolate and coat all sides. Transfer to parchment paper. Chocolate will harden immediately.
