Mouth-watering, delicious, and without grains! What's not to love?
3 large eggs
3 tablespoons salted butter, melted
2 tablespoons water
1 cup Wheat-Free Market All-Purpose Baking Mix
Heaping ¼ teaspoon salt
1 lb. ground chuck or ground turkey
Favorite all-purpose seasoning
1 large onion, finely diced
2 tablespoons butter
8 slices sharp cheddar cheese (or favorite cheese)
Butter or oil for the pan
Bread: Preheat oven to 350 degrees F. Grease the sides and line the bottom of an 8X8 square pan with parchment paper and set aside.
In a medium bowl add eggs, melted butter and water with whisk until blended well. Add baking mix and salt and stir until batter is smooth. Immediately pour batter into prepared pan and tilt pan until batter has spread out evenly. (If you let batter sit too long, it will thicken and be harder to spread.)
Bake for 16-18 minutes or until edges start to brown and toothpick inserted in the center comes out clean. Transfer bread to wire rack to cool. Once cooled (important!) carefully cut bread in quarters, carefully remove each piece, and then cut each in half horizontally using serrated knife. Set aside while burgers cook.
Patties: Form meat into 4 large patties. Preheat skillet to medium-high heat. Add burgers and season with all-purpose seasoning. Cook 3-4 minutes each side, depending on desired doneness of burger.
Drain burgers on paper towels and pour off any remaining oil. Add butter and onions to same pan and sauté on medium heat until tender and caramelized. Salt to taste.
Open bread halves and place 1 piece of cheese on each side. Top bottom half of bread and cheese with ¼ of the sautéed onions, top with burger, then the other piece of cheese and bread. Repeat for remaining burgers.
Add a bit of butter or oil to pan and cook sandwiches over medium heat, around 2 minutes each side or until cheese melt and bread slightly toasts.
