Onions Rings and Buffalo Dip

Serves: 10

Ingredients - Onion Rings:
2-3 large Vidalia onions (sliced in 1/2” rings)
1.5 cups Wheat-Free Market All-Purpose Baking Mix
2 tablespoons paprika
1 teaspoon cayenne
½ teaspoon oregano
½ teaspoon cumin
Dash of salt
Dash of black pepper
2 large eggs
½ cup milk
2 tablespoons coconut oil
½ cup olive oil

Ingredients - Dip:
2 tablespoons Wheat-Free Market Buffalo Wing Sauce
2 tablespoons sour cream
1 ½ tablespoons horseradish
¼ teaspoon paprika
1/8 teaspoon oregano
Dash of black pepper

Preheat oven to 400 degrees. In a medium bowl, combined All-Purpose Baking Mix, paprika, oregano, cumin, salt and pepper. In a separate deep bowl, wisk eggs and milk. Dip onion into egg wash, let excess egg mixture drip off, then “bread” onion evenly in dry baking mix. Place in olive oil coated baking pan. Drizzle more olive oil over top. Bake for 5 minutes or until lightly golden brown. Remove from oven and flip each ring. Bake again for 5-8minutes.
