Nutty Chocolate Bark
2 tablespoons unsalted butter
Pinch of sea salt*
2 tablespoons Virtue Sweetener
2 tablespoons heavy cream
2 tablespoons peanut or almond butter
1-1/4 cups Wheat-Free Market Granola
1 oz. extra dark or sugar-free chocolate
*Omit salt if nut butter is salted
To a small pot add butter, salt and sweetener. Cook on medium heat until the butter begins to brown. As soon as butter begins to brown pour in heavy cream and begin to stir. Cook for 1 minute and then turn off heat. Stir in peanut butter and then granola.
Press mixture into the bottom of a plastic wrap lined loaf pan and set aside.
Chop chocolate into smaller pieces and microwave in a small bowl for 30 seconds at a time until the chocolate has completely melted. Pour the chocolate over the nut mixture and spread it out evenly.
Refrigerate for about 20 minutes or until chocolate has hardened. Cut into smaller pieces.
