Ingredients (Cracker Dough):
2/3 cup Wheat-Free Market Pizza Crust Mix
2/3 cup Wheat-Free Market All-Purpose Baking Mix
2 tablespoons butter, melted
2 egg whites
¼ cup warm water
½ teaspoon baking soda
2 tablespoons lemon juice
1 cup favorite olives, finely diced
¼ cup cherry tomatoes, finely diced
2 tablespoons onions, finely diced
1 tablespoon capers
½ teaspoon dried rosemary
1 teaspoon dried basil
1 tablespoon olive oil
Preheat oven to 450 degrees. Combine Pizza Crust Mix, All-Purpose Baking Mix and butter in a bowl. In a separate bowl whisk the egg whites, water, baking soda and lemon juice and let sit for 5 minutes. Add egg mix to dry mixture and mix thoroughly.
Mix all filling ingredients together. Add ½ to the dough and mix so that the filling is spread evenly throughout. On parchment paper, roll-out the dough and cut into crackers of the desired size. Then individually place each cracker on a parchment-lined cookie sheet.
Bake for 25 minutes. Cool to room temperature. Serve with the remaining filling mixture or a side such as hummus.
