Kringle - Cheese Danish

This recipe is an adaptation (with permission) of Grandma Suzie's Kringle from the fantastic new cookbook by Maria Emmerich called, Keto Comfort Foods.   In the recipe, we used Virtue Sweetener and our All-Purpose Baking Mix.  We also used a bullet-type grinder to create a powdered form of Virtue, more like a confectioners "sugar."

Servings: 8 pieces


1-3/4 cup shredded mozzarella cheese
2 tablespoons cream cheese
3/4 cup Wheat-Free Market All Purpose Baking Mix
1 large egg, beaten

Cinnamon filling:
2 tablespoons butter, melted
½ tablespoon Virtue Sweetener, confectioners style (process Virtue Sweetener for 1-2 minutes in a bullet-style blender until powder forms)
2 tablespoons ground cinnamon

Cream cheese filling:
1 (8oz ounce) package cream cheese, softened
2 teaspoons Virtue Sweetener, confectioners style
1 large egg yolk

¾ tablespoon Virtue Sweetener, confectioners style
2 tablespoons heavy cream 
Almonds, crushed (optional)

Preheat oven to 400 degrees. To make the dough, place shredded mozzarella and cream cheese in a microwave-safe bowl and microwave for 1-2 minutes until melted. Stir well.

Add Wheat-Free Market All Purpose Baking Mix and egg to cheese mixture. Combine well.  Kneed with hands for about three minutes. 

Place dough between two greased pieces of parchment paper about 14 inches long. Using a rolling pin or your hands, spread the dough into an oval approximately 8 x 12 inches.

To make the cinnamon filling, mix together butter, Virtue Sweetener and cinnamon. Spread this mixture out over the entire surface of the dough oval.

To make cream cheese filling, combine cream cheese, Virtue Sweetener and egg yolk in a bowl and mix well. Spread cream cheese mixture over the surface of the dough oval to approximately 1 inch or so from the edges. Fold the edges over to create a “tray” for the cream cheese filling. Bake for 15 minutes. Let cool completely.

To prepare the glaze, mix the Virtue Sweetener and heavy cream together over low heat. If the glaze appears too thin, add more sweetener. If too thick, add more cream. Drizzle over cooled Danish. Garnish with crushed almonds (optional).  The finished product will look like this:
