Key Lime Cupcakes

The citrus flavor of these cupcakes will bring delicate joy to your palate!

Ingredients (Cupcakes):
2 cups Wheat-Free Market All Purpose Baking Mix
1 ½ tablespoons Virtue Sweetener
¼ teaspoon salt
½ cup lime juice
2 eggs, whisked

Ingredients (Frosting):
4 ounce cream cheese, softened
1 ½ tablespoons Virtue Sweetener
1 tablespoon lime juice


Directions:
Cupcakes:  Preheat oven to 350 degrees. Place liners in muffin pan (silicone liners work best). In a large bowl, combined baking mix, sweetener and salt. Mix well. Then add lime juice and eggs and mix together.

Divide the batter evenly among 6 muffin cups. Bake for 20 minutes or until a toothpick inserted into center comes out clean.

Frosting:  In a small bowl, combine ingredients and mix until smooth. Chill mixture in refrigerator for 10-15 minutes. Once chilled, pipe frosting onto top of cupcakes. Garnish with grated lime rind or small lime wedges.
