Jelly Cookies

Makes 16

1 cup Wheat-Free Market All-Purpose Baking Mix
1-1/2 tablespoons Virtue Sweetener
Pinch of salt (if using unsalted butter)
¼ cup butter, room temperature
1 egg white
½ teaspoon vanilla
Low-carb jelly/preserves of choice

Preheat oven to 350° F. In a medium bowl blend baking mix, sweetener and salt. Next add butter, egg white, and vanilla.  (Taste batter and add more sweetener if desired.)

Using a heaping tablespoon measurement, form dough into balls and place on parchment lined cookie sheet. Using a thimble or a pastry tip, make an indention in the cookie for the jelly. Add ½ teaspoon of jelly to each cookie.

Bake 12-14 minutes or until the cookies just start to brown. Cool on wire rack
