Makes about 1 pint
1 quart strawberries, sliced (approximately 2 cups)
1-1/2 tablespoons Virtue Sweetener (or more to taste)
1 tablespoon lemon juice
2 tablespoons Chia seeds
1/2 tablespoon gelatin (optional, this will provide a "stiffer" final product if desired)
Add sliced strawberries, sweetener and lemon juice to a medium pot and cook for 5-10 minutes, or until tender. Using a fork or potato masher, break up strawberries into smaller pieces if desired. Remove from heat and stir in chia sees and sprinkle optional gelatin over jam and stir. Cover pot, and let jam set 10 minutes to allow chia seeds to hydrate.
Follow typical canning directions or store in fridge for up to 2 weeks.
