Instant Pot Chocolate Pudding

Serves: 2

Use Virtue Sweetener to make a small batch of chocolate pudding in your instant pot!

½ cup almond milk
2 tablespoons cocoa powder
½ tablespoon Virtue Sweetener
1 egg
¼ cup heavy whipping cream
Pinch of salt
½ teaspoon vanilla extract

Prepare Instant Pot: Place steamer rack in the inner pot along with 1 cup of water and set to “Sauté” while preparing pudding mixture.

Prepare pudding: Blend almond milk, cocoa powder, Virtue and egg in a Magic Bullet type device for 5-10 seconds. (Do not over blend or lots of froth will form). Then add heavy cream, salt and vanilla and blend for another 5-10 seconds, or until mixture is well-blended.

Pour mixture into (2) 4-ounce ramekins. Cover ramekins with a small piece of paper towel (1/4 size of regular sheet) and then wrap them with foil. This will prevent water from getting into pudding. Place in pot.

Place lid on Instant Pot and lock. Insure vent is closed. Turn off Instant Pot then set to “Steam” for 8 minutes. After 8 minutes, release pressure valve. Once all pressure is released, remove lid and using tongs, carefully remove ramekins. Remove foil and paper towel and chill for at least 90 minutes in fridge before serving.
