1 small apple, cored and diced
½ cup fresh or frozen blueberries (or berries of choice)
1 tablespoon salted butter
½ teaspoon cinnamon
1 tablespoon Virtue Sweetener
½ teaspoon arrowroot powder
1 tablespoon cold water
¼ cup Wheat-Free Market Granola
Whipped heavy cream (optional)
To a small microwave safe bowl add the apple, berries and butter, then sprinkle with cinnamon and sweetener. Microwave on high for 3 minutes. Otherwise, simmer in a small saucepan until fruit is soft.
While the fruit is cooking, mix the arrowroot powder and water together until the arrowroot powder is dissolved. After the fruit is cooked, stir the arrowroot powder slurry into the cooked fruit. The mixture should thicken immediately. Top with granola and if desired, whipped heavy cream. Serve warm.
