Grilled Cheese Sandwich using 2-Minute Quick Bread
Quick Bread (2 Slices):
½ cup Wheat-Free Market All-Purpose Baking Mix
Pinch of salt
2 tablespoons ghee, expeller pressed coconut oil, or extra light olive oil*
2 tablespoons water
1 large egg
*Using butter will create air pockets in the bread from the small water content.
In a small bowl blend the baking mix, salt, oil, water and egg. Pour the batter into a 5 inch microwave safe square container. Tap the container on the counter to ensure the batter is spread out evenly.
Microwave for 60 seconds and then check the center for doneness (an additional 15-30 seconds may be required.)
Once bread is cooked, invert onto cooling rack and allow to cool at least 2-3 minutes before using a serrated knife to split the bread into 2 slices.
Optional: Toast the bread on a low setting to make the bread sturdier before preparing sandwich.
Add ½ tablespoon of salted butter to frying pan over medium heat. Add one slice of bread topped with 2-3 ounces of your favorite cheese. Top with 2nd slice of bread and cover pan with lid to help the cheese in the center melt. After about 90 seconds, check bottom for brownness and flip. Cook for an additional 60-90 seconds or until bread is brown and cheese is melted.
