Ginger-Lime Salmon with Zesty Cucumber Salsa

Serves 2

This is an incredibly flavorful and healthy dish.  It also happens to be beautiful!

Ingredients for Salmon:

Two 6 oz. salmon fillets
1/8 teaspoon salt
½ tablespoon olive oil
½ tablespoon lime juice
Zest of half of lime
½ teaspoon minced garlic
½ teaspoon fresh grated ginger
Fresh black pepper
Preheat oven to 425 degrees F. Place salmon fillets skin-side down on a lined baking sheet. Sprinkle with salt. In a small bowl, blend the oil, lime juice, lime zest, garlic and ginger. Spoon mixture over salmon and then finish with fresh black pepper.

Bake for 15-17 minutes or until salmon is cooked thoroughly and is somewhat flaky.

While salmon is cooking, prepare Cucumber Salsa.

Cucumber Salsa Ingredients:
½ tablespoon extra virgin olive oil
1 tablespoon apple cider vinegar
½ teaspoon lime juice
Zest of half of lime
½ teaspoon grated ginger
1 tablespoon Wheat-Free Market Garlic Serrano Hot Sauce
½ teaspoon Wheat-Free Market Sweetener
Scant 1/8 teaspoon salt
Fresh black pepper to taste
1 teaspoon chopped cilantro
½ cucumber, seeded and diced
½ roma tomato, de-seeded and chopped

In a medium bowl blend olive oil, vinegar, lime juice, lime zest, ginger, hot sauce, sweetener, salt, pepper and cilantro. Five minutes before serving, add the cucumbers and tomatoes. Toss ingredients and taste for salt.

Top cooked salmon with salsa and serve.
