Flourless Chocolate Cake
This recipe will give you that chocolate fix with minimal ingredients and is quite easy to prepare. It will provide one for you and one to share! Easy to double or triple the recipe to make more.
2 oz. bittersweet chocolate (60-70% cacao)
2 tablespoons salted butter
1-1/2 tablespoons Virtue Sweetener
2 large eggs, room temp (divided)
Preheat oven to 350 degrees F. Place butter and chocolate in a double boiler and allow chocolate to melt. Turn off heat and stir in sweetener. Remove from heat and whisk in egg yolks (batter will be thick).
In a separate bowl, whip egg whites until stiff peaks form. Gently fold egg whites into chocolate mixture, being sure not to overwork the batter.
Butter the bottoms and sides of two 8 oz. ramekins then sprinkle ½ teaspoon of sweetener in each. Divide batter between the 2 ramekins and bake for 18-20 minutes or until center is set.
Serve warm or room temperature plain or with whipped cream.
