Makes: 4 Muffins

Ingredients:
1 large egg
1 tablespoon unsalted butter, melted (or coconut oil)
2 tablespoons full fat coconut milk (or heavy whipping cream)
1 tablespoon plus 1 teaspoon Virtue Sweetener
½ cup Wheat-Free Market All-Purpose Baking Mix
1-1/2 tablespoons cocoa powder
Pinch of salt
2 tablespoons dark chocolate chips (divided)


Directions:

Preheat oven to 325 degrees F.

Use lined muffin tin or ideally 4 silicone baking cups.

In a medium bowl combine egg, butter, milk and Virtue.  Whisk until well-blended and Virtue is dissolved.

In a separate small bowl, combine baking mix, cocoa powder, salt and half of the chocolate chips. 

Fold chocolate mixture into egg mixture until there are no lumps. 

Pour batter into baking cups and top with remaining chocolate chips. Bake for 12-15 minutes or just until toothpick comes out clean. 

Cool at least 15 minutes before removing from silicon and cooling on rack.
