Cinnamon Rolls

Few foods are more pleasurable - especially when there is a chill in the air - than warm cinnamon rolls.  It is a favorite of both the young and the young-at-heart.  And what better way to enjoy foods you love made the "grain-free way!"


¾ cup Wheat-Free Market All-Purpose Baking Mix
Pinch of salt
1 large egg
1 teaspoon Wheat-Free Market Sweetener
2 tablespoons butter, melted
1 tablespoon heavy cream
½ tablespoon butter, melted
½ teaspoon cinnamon
½ teaspoon Wheat-Free Market Sweetener
2 tablespoons chopped walnuts
1-2 tablespoons raisins, chopped

Preheat oven to 350 degrees F.

In a medium bowl blend the baking mix, salt, egg, sweetener, butter and cream. Transfer dough to a cutting board lined with plastic wrap. Place another piece of plastic wrap over the dough and roll it out into a rectangle approximately 8X6 inches. Carefully remove the top piece of plastic wrap.

Drizzle butter then cinnamon, sweetener, nuts and raisins evenly over the dough.

For small rolls, carefully roll the dough up starting with the longest side, pulling the plastic wrap away from the dough. Place roll in freezer for 15 minutes to make it easier to cut.

Cut the roll into 5 pieces and place on a lightly oiled cake pan, 2 inches apart. Bake for 15-17 minutes or until the sides begin to brown.

Cover warm rolls with Cream Cheese Frosting.

Cream Cheese Frosting

2 oz. cream cheese, room temperature
1 tablespoon heavy whipping cream
½ teaspoon Wheat-Free Market Sweetener
1/8 teaspoon vanilla extract

In small bowl blend cream cheese, cream, sweetener and extract until smooth.  Generously spread on top of warm rolls
