Cinnamon Raisin Toast

Makes: 2 Slices


This is a quick and easy way to enjoy cinnamon toast from time to time with minimal carbs and without the destruction of grains.  While we generally are careful with raisins, chopping them up helps spread the flavor throughout the toast and thereby minimize the quantity used.  One teaspoon of raisins (maybe just 8-10 raisins at most) has only about 3-4 net carb grams.


Ingredients:
¼ cup Wheat-Free Market All-Purpose Baking Mix
½ teaspoon cinnamon
½- ¾ teaspoon Virtue Sweetener
2 tablespoons melted butter
1 large egg
1 tablespoon milk of choice
1 teaspoon of raisins, roughly chopped


Directions:

Add baking mix, cinnamon and Virtue to a bowl and blend well. Then add butter, egg, milk, raisins and mix.

Microwave directions: Pour the batter into a 5-inch microwave safe square or sandwich shaped container. Tap the container on the counter to ensure the batter is spread out evenly.
 
Microwave for 60-90 seconds (microwave ovens may vary) or until the center is done. 

Oven directions: Preheat oven to 350 degrees F. Grease small square dish, approximately 5X5. Pour prepared batter into dish. Bake for 10-12 minutes or until center is done.

Once bread is cooked, invert onto cooling rack and allow to cool at least 2-3 minutes before using a serrated knife to split the bread into 2 slices then toast in traditional toaster.
