Grain-free bagels have been all the rage on social media lately, so here is a great recipe for a fun-to-make and tasty cinnamon bagel.

Cinnamon Swirl Bagels

Makes: 6

1-1/2 cups Wheat-Free Market All-Purpose Baking Mix
2 eggs
3 tablespoons cinnamon, ground (divided)
1-1/2 cups shredded mozzarella cheese
4 tablespoons cream cheese
Dash Virtue Sweetener

Preheat oven to 400 degrees. 

In a bowl, mix the baking mix, eggs, and half of the cinnamon (approx. 1-1/2 tablespoons) until combined. 
Place shredded mozzarella and cream cheese into a pot and heat on low. Stir constantly until melted (about 2-3 minutes). Immediately add melted cheese to the bowl of mixed ingredients. 

Use a mixer on low to thoroughly combine the dough. (You may need to use a spatula to occasionally scrape off the mixer paddles and then continue to mix on low.) Once the dough is well-blended, sprinkle the remaining cinnamon and a dash of Virtue Sweetener across the dough. Gently fold the dough over and divide into 6 equal parts while still in the bowl. 

Remove each part and roll into log shapes and then shape into bagels. Place on a baking sheet and bake for approximately18 minutes or until done.
