Chewy Chocolate Chip Cookies

Makes 10 cookies

½ cup plus 2 tablespoons
Wheat-Free Market All-Purpose Baking Mix
3 tablespoons unsalted butter, room temperature
1 large egg
1-1/2 tablespoon
Wheat-Free Market Sweetener
½ teaspoon vanilla extract
Pinch of sea salt
¼ cup plus 2 tablespoons sugar-free or extra dark chocolate chips
¼ cup chopped pecans or walnuts

Preheat oven to 350 degrees F. In a medium bowl add baking mix, butter, egg, sweetener, vanilla, salt, chocolate chips and nuts. Blend well.

Using a 1-1/2 tablespoon scoop, scoop the dough onto an ungreased cookie sheet. Flatten cookies out to desired shape, approximately a 3 inch circle.

Bake for 12 minutes or until the edges begin to brown. Allow cookies to cool for 1 minute before carefully transferring them to a wire rack to cool completely.
