Chicken Parmigiana

Serves 6

1-1/2 lbs. chicken tenderloins
Salt and pepper
1 packet Wheat Free Market Flaxseed Wrap Mix OR ½ cup Wheat-Free Market All-Purpose Baking Mix
¼ cup grated Parmesan cheese
¼ teaspoon salt
1 tablespoon Italian seasoning
1 large egg, beaten
Favorite marinara sauce
Mozzarella cheese

Preheat oven to 400 degrees F. Generously season chicken tenders with salt and pepper. In a large bowl or zip top bag, add the wrap mix OR baking mix, parmesan cheese, salt and Italian seasoning. In a bowl, dip chicken into beaten egg being sure to remove any excess.  Then add chicken to the breading mixture until it is evenly coated.

Place breaded chicken on an oven safe cooling rack on top of a cookie sheet. Bake for 15 minutes or until chicken tenders are done.

Once chicken is done, remove from oven and turn oven to broil. Place chicken on cookie sheet and cover with marinara sauce and generously top with mozzarella cheese. Place under broiler until cheese has melted.

Serve with spaghetti squash!
