Pulled Chicken Gorditas
Makes 5 gorditas
Ingredients for Gorditas:
¼ cup Wheat-Free Market All-Purpose Baking Mix
¼ teaspoon chili powder
1/8 teaspoon ground cumin
¼ teaspoon salt
1 tablespoon melted butter plus extra 1 tablespoon for pan
1 tablespoon water
1 tablespoon finely chopped bell pepper
1 tablespoon finely chopped onion
In a medium bowl blend baking mix, chili powder, cumin, and salt. Stir in the egg, butter, water, bell pepper, and onion.
Heat frying pan over medium heat and add butter to pan. Using a 1-1/2 tablespoon measurement, scoop batter onto hot pan, flattening out the batter slightly (approximately 3 inches wide). Fry for 3-4 minutes before flipping. Cook an additional 2-3 minutes or until browned. Set aside.
Building your Gorditas:
Heat leftover rotisserie chicken or pulled pork in a skillet with a few dashes of chile powder, salt, and pepper. Build your gorditas by adding a dollop of sour cream to them, then add the chicken or pork and top with salsa or pico de gallo, cilantro, and a dash of lime juice.
