Broccoli-Cauliflower Bites

Makes 25-30


This appetizer, similar to hush puppies, might even tempt your wheat-eating friends to consider grain-free living!  While we tend to limit deep-fried foods because of the high cooking temperatures, consider this an occasional indulgence or treat.


Ingredients:
12 oz. broccoli and/or cauliflower, cooked, drained, cooled
1 large egg
6 oz. shredded sharp cheddar cheese (approximately 1-1/2 cups)
¼ cup Wheat-Free Market All-Purpose Baking Mix
1 teaspoon Cajun or all-purpose seasoning, to taste
Palm oil, lard or expeller pressed coconut oil for deep frying
 
For dredge:
1 large egg
1 cup Wheat-Free Market All-Purpose Baking Mix
1 teaspoon Cajun or all-purpose seasoning, to taste

Chop cooked cauliflower and/or broccoli in food processor and then place in large bowl. Add egg, cheese, baking mix and seasoning. Stir and taste for seasoning and add more if desired.

For dredge, beat egg in small bowl and set aside. In another shallow bowl, add baking mix and seasoning. Mix well and taste for salt, add more if needed.

Scoop out broccoli and cauliflower mixture using a 1 tablespoon scoop. Transfer to egg mixture and coat, being sure to remove any excess. Then transfer to seasoned flour and roll bite around until it is evenly coated. Repeat for remaining bites.

Bring at least 5-6 inches of oil to 350 degrees F in deep fryer or large pot.

Once oil it at the correct temperature, using a slotted spoon, lower 3-4 bites (or more depending on size of pot) into hot oil and cook 60-90 seconds or until golden brown. Transfer to paper towels to drain.

Serve warm with Cool Buffalo Sauce.
Cool Buffalo Sauce
¼ cup sour cream
¼ cup mayonnaise
1 tablespoon Wheat-Free Market Buffalo Wing Sauce

Blend sour cream, mayonnaise and buffalo sauce in small bowl. Chill until ready to serve.
