note: This delicious grain-free breakfast solution can feed the family and be made with sausage, ham, or bacon. Feel free to add veggies or anything else you desire! The Sweet Butter Glaze is optional but is certainly a nice touch!
1-1/2 cups Wheat-Free Market All-Purpose Baking Mix
2 large eggs
1/4 cup plus 2 tablespoons salted butter, room temperature
1/4 teaspoon salt
1/4 cup sour cream
1 lb breakfast sausage
1 small onion, finely diced
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons whipping cream
4 oz. sharp cheddar cheese, shredded or thinly sliced
Preheat oven to 375 degrees F.
1) In a medium bowl, blend baking mix, eggs, butter, salt and sour cream. Stir well and set aside.
2) In a medium pan, brown sausage and onion until meat is cooked and onions are tender. Drain if needed and place in the bottom of an 8X8 pan (lined with foil or parchment paper for easy cleanup).
3) In a medium bowl, beat eggs, salt, pepper and cream. Pour egg mixture over sausage mixture in the 8x8 pan and then top with cheese.
4) Evenly spoon the baking mix mixture over the top of the casserole.
Bake for 25-30 minutes or until top is golden brown and eggs have set.
Top with optional Sweet Butter Glaze (below)
Sweet Butter Glaze Ingredients and Preparation:
¼ cup salted butter, room temperature
½ teaspoon- 1 teaspoon Wheat-Free Market Sweetener, Virtue
Blend butter and sweetener in a small saucepan over low heat and until sweetener has desolved. Taste for sweetness and adjust if needed. Smear warm biscuit casserole with sweetened butter.
