Blueberry Buckle for Two

Serves 2

1 packet Wheat-Free Market Mixed Berry Muffin Maker

   (or 1/3 cup plus 1 tablespoon from bulk pouch)
½ teaspoon Wheat-Free Market Sweetener
2 large eggs
2 tablespoons milk or water
1 tablespoon melted butter
¼ cup fresh blueberries
2 tablespoon Wheat-Free Market Granola

Add muffin mix, sweetener, eggs, milk (or water) and butter to a small bowl and mix well. Gently stir in berries.

Transfer batter to an 8 ounce ramekin or other small microwave/oven safe bowl. Top with granola.

Microwave version (as pictured): Microwave for 90 seconds to 2 minutes or until the center is set.

Oven version:  Preheat oven to 350 degrees F. Place ramekin on cookie sheet and bake for 20-22 minutes or until toothpick inserted in the center comes out clean.

Carefully remove from microwave/oven and top with fresh whipped cream or low-carb ice cream.
