Easy Barbecue Sauce

Makes about 3-1/2 cups

¼ cup salted butter
1 small onion, very finely diced
1 tablespoon minced garlic
3 cups crushed or pureed tomatoes
¼ cup apple cider vinegar
2 tablespoons
Virtue Sweetener
1 tablespoon gluten-free liquid smoke
¼ teaspoon sea salt
1 tablespoon (or more)
Wheat-Free Market Chipotle Hot Sauce (optional)

In a medium pot over medium heat add the butter and onions. Cook for 8 minutes or until the onions become tender. Add the garlic and cook for an additional 2 minutes, stirring often. Add the tomatoes, vinegar, sweetener, liquid smoke, salt and hot sauce. Cover and cook over medium-low heat for 15-20 minutes. Taste for salt and heat and adjust if needed..
