This is a great way to enjoy the great taste of a banana split without all of the carbohydrates. Small amounts of fruit chopped well can spread both the carbs and the flavor across many servings.
¾ cup Wheat-Free Market Baking Mix
¾ cup finely chopped pecans
1/8 teaspoon salt
½ tablespoon Virtue Sweetener
3 tablespoons salted butter, melted
8 ounces cream cheese, room temperature
1 cup heavy whipping cream
1-1/2 tablespoons Virtue Sweetener
½ teaspoon vanilla extract
½ cup chopped pineapple
½ cup sliced strawberries/cherries
1 ounce melted dark chocolate
Crust: Preheat oven to 350 degrees F. In a medium bowl, combine baking mix, pecans, salt, Virtue and butter. Blend well and then press into the bottom of an 8X8 inch baking pan. Bake for 15-18 minutes or until sides start to brown. Allow to cool completely.
Filling: Add cream cheese to medium bowl and blend with mixer until smooth. Then add whipping cream, Virtue and vanilla. Blend on low speed for 1-2 minutes then high speed until filling is thick. Taste for sweetness and adjust if needed. Pour filling on top of cooled crust. Top with chopped fruit and then drizzle with melted chocolate.
