Baklava Bars

Makes: 4

These rich and delicious Baklava Bars are so satisfying that one is just enough to enjoy with coffee or tea!

Bottom layer
4 Wheat-Free Market Shortbread Cookies, crumbled
1/8 teaspoon lemon zest
1 tablespoon butter, melted
1 egg white

Top layer
1/3 cup unsalted pistachios, chopped
¼ cup Wheat-Free Market Slow Toasted Flakes, slightly crumbled
1 tablespoon butter, melted
½ teaspoon Virtue Sweetener
1/8 teaspoon cinnamon
1/8 teaspoon vanilla
Pinch of salt
1 egg white

Preheat oven to 350 degrees. Mix all bottom layer ingredients together. Press firmly into the bottom of a small baking pan to create a crust approximately ¼ inch thick. Cover with foil. Bake for 10 minutes. Set aside.

Prepare top layer. Combine the pistachios and Slow Toasted Flakes with the butter until evenly coated. Then add sweetener, cinnamon, vanilla, salt and mix thoroughly. Lastly add the egg white and mix well. Spread mixture over bottom layer and bake at 350 degrees for 5-10minutes. Remove when lightly browned on top.

Optional Syrup:  Mix 1 tablespoon molasses and 1/2 tablespoon melted butter together and drizzle over bars before serving.  If using the syrup, be mindful it adds 4 carb grams per bar.
