Baked Chicken and Provolone Sandwich

This is a really neat recipe where you make a sandwich in a "sheet," bake it, and then cut it into sandwich squares.  It reminds me somewhat of hot Cuban sandwiches in its style.  You really need to let the bread cool first before shearing it into two sheets, and definitely use a long serrated bread knife to do so.  The could be prepped beforehand and then baked when ready to serve and will present themselves beautifully to family and guests!

Ingredients (Bread):
3 large eggs
3 tablespoons salted butter, melted
2 tablespoons water
1 cup (3.5 ounces) Wheat-Free Market All-Purpose Baking Mix
Heaping ¼ teaspoon salt

Ingredients (Honey Mustard):
¼ cup mayonnaise 
¼ cup spicy mustard
1/4-1/2 teaspoon Virtue Sweetener 


Sandwich Prep and Fillings:
8 slices provolone (or favorite cheese)
Sliced chicken breast from rotisserie chicken (or about ¾ pound prepared meat)
3 large dill pickles, sliced

Extra 1 tablespoon butter, melted
Extra 1/8 teaspoon salt
1 tablespoon sesame seeds


Directions:
Bread: Preheat oven to 350 degrees F. Grease the sides and line the bottom of an 8X8 square pan with parchment paper and set aside.


In a medium bowl add eggs, melted butter and water with whisk until blended well. Add baking mix and salt and stir until batter is smooth. Immediately pour batter into prepared pan and tilt pan until batter has spread out evenly. (If you let batter sit too long, it will thicken and be harder to spread.)

Bake for 16-18 minutes or until edges start to brown and toothpick inserted in the center comes out clean. Transfer bread to wire rack to cool. Once cooled (important!) carefully cut bread in half horizontally using serrated knife.

Honey Mustard: Blend mayonnaise, mustard and ½ teaspoon of Virtue sweetener. Taste for sweetness and add more Virtue as needed.

Sandwiches: Preheat oven to 350 degrees F. Line bottom and sides of 8X8 pan with foil. Spread half of the Spicy Honey Mustard on the bottom sheet of bread and then gently transfer bread to prepared pan. Top with 4 slices of cheese, sliced chicken breast, then sliced pickles followed by remaining Spicy Honey Mustard then the rest of the cheese. Top this with the other sheet of bread.


In a small bowl blend butter and salt and brush onto top sheet of bread. Sprinkle with sesame seeds. Bake for 22-25 minutes or until cheese starts to bubble and edges of bread start to brown. 

Remove foil with sandwich to cutting board and cut into 4 generous sandwiches.
