3-Minute Chocolate Cake for Two
In a bowl whisk one egg and a splash of milk.
Add 1/3 cup plus 1 tablespoon Wheat-Free Market Ginger Spice Muffin Maker.
Add 1 teaspoon of Virtue Sweetener (or about 1 tablespoon sugar equiv.)
Add 1 tablespoon of cocoa powder.
Mix together very well, adding a splash or two of water so that you have a batter consistency.
Pour into a 4 inch paper tart cup. Microwave for 95 seconds.
For frosting, mix together 3 ounces of cream cheese, 1/2-1 teaspoon of vanilla extract, and a teaspoon of sweetener. Spread on top of cooled cake and garnish with fruit.
